About Zanthoxylum bungeanum
Zanthoxylum bungeanum is known for its red pepper fruits with a strong, spicy aroma and a characteristic tingling, slightly numbing sensation in the mouth. This winter-hardy, deciduous tree has thorny branches and aromatic leaves. The fruit husks are dried and widely used in Chinese cuisine. Zanthoxylum bungeanum grows best in a sunny, sheltered location with well-drained soil. A second tree is not always necessary for fruit production, but pollination by a male Zanthoxylum bungeanum can increase the yield.
Fruit Quality
The red pepper fruits of Zanthoxylum bungeanum have a strong, spicy aroma with fresh citrus notes. As they ripen, the fruit husks split open, revealing the glossy black seeds. Only the aromatic red fruit husks are eaten and used as a spice, usually dried and ground. The hard black seeds are removed and not eaten.
